Raised in the kitchens of Murcia, Jorge learned all the secrets of rice at Finca Santiago, one of the region's most renowned restaurants for traditional rice dishes. He brings decades of hospitality experience and an obsession with getting the socarrat just right.

María, the Valencian sidekick

Born in Valencia, the cradle of paella, María brings the tradition and true flavour of her homeland to every event. She ensures every dish honours centuries of tradition while bringing warmth and joy to your table.

Our story

We didn't plan to start a paella business. We just really loved cooking it — and one of us has been doing it for years.

This whole thing began on our Sydney terrace, sharing paella with friends almost every weekend. Slowly, it turned into a bit of a ritual — people brought wine, stories, even their own plates when we ran out. And they always came hungry.

But behind the scenes, there's a lot more than good vibes and big pans. Jorge brings years of experience in the hospitality world. He's worked in restaurants, bars, events and kitchens across countries — always with one foot in service and the other at the stove. He knows food, he knows people, and he knows how to make everyone feel welcome. Paella has always been his signature dish — from small gatherings to big celebrations.

We take pride in doing things right: homemade sofrito, real saffron, slow-cooked fumet — no stock cubes, no shortcuts. We cook everything on-site, serve it hot, and stay for the good times.

What started as a passion project is now a growing adventure, and we're so excited to bring it to you — your backyard, your event, your team lunch, your wedding, or wherever you want a big, happy spoonful of joy.

Our Paellas

Real saffron. Homemade sofrito. And of course — our secret weapon: the fumet.
No shortcuts. No stock cubes. No water. Just pure flavour, simmered slow and shared with love.

Valenciana

The original. Tender chicken, rabbit, and seasonal vegetables cooked low and slow. When artichokes are at their peak, we add them too. This is paella as it's meant to be—pure, traditional, and soulful.

Pork Ribs & Peppers

Fall-off-the-bone pork ribs, sweet red capsicum, and a smoky kiss of Spanish paprika. Bold, comforting, and absolutely worth fighting over the last piece.

Seafood Paella

Prawns, squid, mussels — everything the ocean has to offer. Bright, briny, and always a crowd favourite. This one disappears fast.

Duck & Green Garlic

Rich, slow-cooked duck confit meets fresh green garlic for something truly special. Deep flavours, silky texture, and yes — artichokes when nature allows. A showstopper.

Vegetarian

A colourful celebration of seasonal vegetables with depth from our homemade fumet base. Meat-free, full-flavoured, and never an afterthought. Artichokes included when they're in season.

Before we had paying clients, we had paella days. Every week, we fire up the pans on our terrace and feed our friends — rain or shine.
